And the monks protect the wine Production Using in uh in the midst The mass like a part of Their religion and for their religion So uh that period we still Keep the the wine production and when We’re growing Grapes in this region and after that It’s coming from luxera As a huge problem for whole europe And this period it’s not so good To remember but uh Then uh macedonia republic of macedonia Is a part of Yugoslavia in 20th century after the Second world war It’s become the fruit basket for For the let’s say for the yugoslavia Then Uh because a lot of uh Increasing of development of viticulture And agriculture at all Was based actually in the republic of Macedonia Uh for the sample hotel that maybe in 80s Around the 80s macedonia was participate With 80 percent of wine production in Whole yugoslavia but in that period the Quantity Was much important than the quality Even then some vingerons Wine growers achieve awards for the
Higher production Of the grapes but Run its debt periods even it’s High productive they offer the The slightly higher let’s say quality Than other great varieties And production we are talking about Production about 35 tons per hectare Let’s say and then the things changes A little bit and come to the end of 20th Century And so developments modern viticulture Modern wine making or what we’re talking Later Uh with this presentation So we’re going About some facts uh of wine production Total vineyards we are not so big wine Region total vineyards are 33 000 as you see but under the The the wine grape varieties uh it’s 28 000 hectares Almost 74 registered binaries And 20 000 brave growers which show Showing the pretty much fragmented Production of of grapes of bread growing Here Uh that impacts uh sometimes on the on The quality Of of device but there’s a Lot of projects to educate the grape Growers And to follow the all their activities In the vineyard

Commodity uh Import which is export from North macedonia uh when we’re talking About the consumption per capita We need to to i need to tell you that It’s not counted the small producers For home production and they also Produce and Consume pretty much higher quantity But i i think that probably this Consumption will be Moved near closer to the 20 liters Per capita almost almost double let’s Say Top 10 export destination in bottle Serbia croatia bosnia slovenia this Neighboring Country from mexi yugoslavia china Russia going to negro germany kosovo usa To usa and other And when we’re talking about the bulk Wind the germany is A huge market for for our for our bulk Wine Syria croatia slovakia canada bulgaria Romania As you can see the montenegro is here as Well But uh this uh actually this uh Information is come from the Official customs of north macedonia so Definitely we export Some bulk wine to montenegro and i don’t Think that is white one
However okay and now we come to the Wine region this is the map of Yugoslavia and oh sorry North macedonia and under as you see we Have one Region at all which is uh macedonia wine Region and Then is split on the western part With 1080 hectares And this western part encompassed Six wine districts then in central we Have a Central part central wine region which Is also called river valley and These encompass seven wine districts and East wine region with 100 With 1700 hectares Three wild districts and in total we Have 16 Wine districts much important is the Barda river valley and the central wine Region I when i say important i don’t think i Don’t want to say that The other is less important but here we See a huge potential For the wines and huge potential for Developing of Agriculture of course western part Has uh some other styles production of Wines The eastern part some other more Efficient And so on so
When we presenting the wine districts as You can see on the relief map It’s usually based behind these tricks Into the buses Into the buses surrounding with the Mountain and on the foothills of the Mountains Are the actually the best vineyard but This is not something New because mostly the vineyards in the World Are usually based uh on the Some foothills sort of mountains or Hilly Because this is specific there are For a very good for wine production This is big fish wine region the we Start with Much important wine district with Twelve thousand thirty hundred hectares And most of the wineries are concentrate Uh they are antiquatch then we go From the north scorpio wine district Offering more thrashing wines Vellus wine district as well similar And we have on the south as you can see Here we have in this sorry In this we have in this part we have a Canyon here Uh from which it’s blowing the Mediterranean Uh climate but this one distributor is Actually part of the Of the thessaloniki plane uh which is

We have a high temperature into the Summer absolutely Can reach 40 45 degrees So but in the harvest we also Can have a heavy rains or just summer Rains Rains this wind really helps to Dry the grapes and we don’t need to use Actually fungi from the sides which is Make much easier for organic wine Production In the walda river valley at all like a Wine region So that will be about the climate about The soils I’ll just mention that it’s a very huge Diversity of soils And as you can see there’s a mountain a Lot of mountains And uh in the sub uh Subsoil it’s uh often you can find uh Some volcanic soil especially here at The foothills of the Kojou which we know that Impact somehow not with geological Minerals but impact on the taste of the Wine As well on the higher altitudes the Graves are More smaller so we have a more Polyphenols we have more anthocyanins Tanines and so on when you don’t have Too much Pulp and that will be
About the climate about the Classification very briefly from the Right side is actually European union one law we have a table Wine at the base from where we come this Is Uh for the the graves come from the huge Wine region everywhere In the north macedonia then we have Vgi or wine with geographical education Which is equal to european Uranium sorry to The european union as pgi protected Geographical Dedication that means that has some Restriction in by production and as well In the grey production and It still comes from the beer area graves Come from the bigger area but It’s not like a from the table wines Come from particular Wine districts and then we have a wine With controlled origin Together with wines with controller and Guaranteed origin Which is actually uh equal which pdo or Protected designation of origin From european union one law That means that wines come from very Small Areas and very controlled Yields reduction in the yields There’s a higher percentage of alcohol And as well
Permitted and which great varieties are Permitted in this production As well and in the winery some purchase Some processes which need to be Provide during the the production so This should be reflected to more quality Wines But uh i also need to mention that Under this appellation the analogists Usually have more untied hands To experiment and to to work with some Other grape varieties or with some Grapes from other wine regions and that Not means that quality will be lower Okay about the classifications this now We’re going With the branaghs as a grape variety The name vranas as pronounced In montenegro serbia Bosnia herzegovina croatia and the Vranets We said in north macedonia there’s also The kosovo Branch i think uh This is pronounced this great priority The name is come From um actually the synonyms But the name the term bran means black And etymological meaning is like a black Stallion Or black horse Because the wines because of the Appearance of the color of the wines of Its strength and

They fit well with our wine regions here And the other countries in Neighboring countries where we can find Production in the France is kosovo which near You can see participate with three Percent of total Amount of production of granites North macedonia is 68 montenegro 23 Then we have uh bosnia herzegovina Also with three percent croatia mostly In the southern Part of croatia and the coastal part and Usually Used for blend with plants mali with Two percent and serbia which 120 Hectares Small there’s some near the fushkagora And In the some some vineyards in the uh Southern part of of serbia Also uh in total production is Of run since actually it’s planted Actually it’s 15 Almost 16 000 hectares About the wine making traditional wine Makings and Modern wine making this is uh actually The the stone the stone tubes Find uh zagret behind the marcos towers In prelab wine district there’s a few Probably 50 of these stone jews tubes And they witnesses for long tradition of Production

Researching plural selection Then we uh we have a new approach to Choosing the To exploring and choosing the terrors Which are More fittable more suitable for the Grave variety Then uh and we have a lot of research About the The soils which is also considered as Important for using the grape varieties The proper grape variety then we have a Root stocks We made some researching about the roof Stocks And we find pretty much the impact of The Roof stocks on the phenolic components And antacions Into the planets Then we have experimenting with new Grape varieties the More coming uh grape varieties from Southern rome Uh usually because we have some Similarity with This wine region we try with lasting the Intervention in vineyards moving to Organic production Selection during the harvest picking the Grapes in several three three eyes Patriarchs picking the grapes for Premium For premium wines and then make another
Harvest And so on in the Winery there’s modern production It’s using the cutting gauge technology Rigorous control to all process Cooling the grapes grape selection Optical selection of grapes of berries Uh creole macerations or the cooler Temperature Extracting the the aromas and flavors From the wines Temperature regulated fermentation yeast Selection Selection the proper yeast for each Grape variety for Style of wine what we want to achieve So we have processes in elevation we Have a betanar suli Mololactic fermentation so we have very Er oxygen very important Process of oxygen control then in Process we use oak mostly french American slavonian but As well and macedonian oak is also Used into the maturation process We come back to the cement tanks because Cement We consider it that can offer something Like oak And stainless steel cannot offer And we try more with bottle aging Of the more well-structured wines and As well updating the archives and Come back from time time making the
Vertical destination Of wines and Connect collecting this information and Using for Further production maybe i Know maybe i’m sure that i’m missing a Lot of processes that is Encompass the modern wine production but This is what is usually done here My characteristics about the run is as You can see On the uh we have a very large Core here and it’s dark almost almost Black That is why it’s calling it It’s very highly concentrated and if you See on the rim It’s very tiny ring so we have very very Good Extraction here in extracts here in This wine all the seans are moving Five milligrams per liter higher than Five milligrams And we also have a highest level of Resveratrol Which is antioxidants and make these Planets very healthy Let’s say wine it’s not the healthiest Wine in the world but Can be uh close to the grape varieties Like malbec or maybe cabanas And this is exactly where the Run is defined what Is uh also important is when it’s young
Is a purple with purple rim And uh see 2018 and In 2011 when it’s old They have a little bit garnet but the Mostly change to the deep Ruby color so this differences in color And Intensity can be can give us Information about the uh about the Youngest Donors actually of the of the Of the brands and this 2011 Was still fruity which means that 10 Years We don’t find here any tertial notes yet So the bronze has a very good potential For aging my characteristics about the Taste we have a high acidity Heightenings full body wine and With long and pleasant finish uh Which is as you can see it’s almost Everything on high But it’s you know very with the good Quality wise With very good balance and very good Harmonious Uh order of flavors And when we’re talking about the primary Uh primary notes aromas we can find the Black cherry Overripe saltery pomegranate Blackcurrant In the hot vintages we can find the Blueberry jam
Some violets floral aromas and sun dry Siege uh secondary international aroma Will go in direction of offering prawn Vanilla from oak chocolate sweet tobacco And leather so if you see all these Aromas you can think probably that it is Aromatic grape variety actually it’s not You can find some part of these aromas And flavors in Some of of granites not In not all these aromas can be finding In umbrellas to be so complex And we come at the end almost just to Mention About the the y styles Yesterday we have a brand small day 5th Of october And we have opportunity to taste Some small group have opportunity to Taste some Grannies or several producers here in North macedonia Uh when we talk about the montenegrian Style and macedonian style Style i always like easiest to explain Something like Sira and shiraz let’s say syrah from France It’s more elegant more spicy than shiraz From Australia offer more uh More fruity more concentrate more bolded Uh Reds when i when we compare
Montenegro style and not Macedonian-style brownish We can use the the same terms uh When we go deeper to the macedonian Style of wines The ones which come from the more in Continental inflation over more higher Acidity More fashion more vivid wines more Fruity wines Let’s say and the wines which come from The Southern part with under more influence Of the Mediterranean climate they offer more German German gemini nodes fruity nodes but Higher concentration higher knees More powerful more alcohol but Usually well integrated alcohol so also We can use for granites the Following terms bold bolded powerful Concentrate fruity expressive Burning alcoholic intensive opulent Complex reality Tonics cool and harmonious temperamental Vivid And long-lasting as it promised land Of the eternal sun okay that will be all Of this presentation and I would like to thank you and make a Cheers with you And if you have any questions i’m here To
